WHY?

Anyone who knows me know that i have been trying to lose weight since i was about 21 yrs old. That was many, many years ago - approx 20 years ago!

Diet after diet, you name it i have tried it - a never ending cycle in an attept to lose weight and keep it off. Well they  have not worked.
So i have come to the conclusions that diets do not work (long term) well not for me anyway.

Over the past year i have been trying to change my diet so that it is as healthy as possible.

I have reduced the saturated fats dramatically, removed the trans fats completely, ditched all types of artificial sweeteners, cut out caffeine and dumped as much processed foods as possibly, cut right down on dairy products and banned all diet foods.

Basically i have gone back to basics!

Not that it is making a scrap of difference - I still keep crashing and burning. I put tons of effort into what i eat, then something happens and i get stressed and the result is that i lose control and ruin everything. I ruin it by turning to food for comfort.

So i have decided to try to work out why food brings me comfort. Well food does increase your blood sugar level and sweet food produces a huge spike in your blood sugar levels.

So i wondered, does high blood sugar levels produce good feelings??????? I will come back to this later.

A while ago i happened across a thought about what was actually in the food i was spending a fortune on. Diet products, low fat products, sugar free labels - they cost a fortune and when you acually take the time to look at what is in  diet products it will make your hair curl.  That said i decided that i would try a different approach. No more Diet Products. They are a rip off. and full of rubbish!

Do you know what is in the low fat mayo you put on your salad?  Well think about it,  they take out the fat so they have to replace it with something?

Mayonnaise without fat is  watery milky sloshy  and yucky.  

To replace the fat from the missing egg yolk, modified food starches are added so that the low-fat mayonnaise retains the creamy texture and thickness of real mayonnaise.
These food starches can be made from  gums, or agar agar (a seaweed extraction). 

One of the gums used is cellulose gum - it  is used as a viscosity modifier or thickener, and to stabilize emulsions. As a food additive, it has E number E466. It is used in many non-food products, such as K-Y Jelly, toothpaste, laxatives, diet pills, water-based paints, detergents, textile sizing and various paper products. In laundry detergents it is used as a soil suspension polymer designed to deposit onto cotton and other cellulosic fabrics creating a negatively charged barrier to soils in the wash solution. It is used as a lubricant in non-volatile eye drops (artificial tears). 
 
Salt is added to enhance flavor of low fat mayo.  The amount equals approximately 1/16 teaspoon of salt per tablespoon serving of mayonnaise.

Preservatives such as calcium disodium EDTA are added to increase shelf-life.
